USDA Size Standards For Potatoes:
A-size: (large potatoes) At least 40% are 2 ½ inches in diameter or larger or 6 ounces in weight or larger.
- Use for a moister, oven-baked or microwave potato. Due to its more cohesive makeup, the red potato is also the best potato for mashing or making potato salad.
B-size: Commonly called "New Potatoes," these tender smaller potatoes are in the 1 ½ to 2 ¼ inch diameter range. Normally, only about 10% of an area's crop will be harvested in this size.
- Boil with skins on for a colorful, tender treat with any meal.
C-size: The smallest "baby" potatoes selected (less than 1 ½ inches in diameter) Try this gourmet delight:
- SPUD BOILS from chef Bill, the Wal-Mart Corporate Chef. "Try what the Cajuns have been eating like peanuts or popcorn for years. Simply boil and add 3 ounces of seasoning per gallon of water. Seasonings could include: Onion soup mix, beef or chicken base, pickling spice, seafood seasoning or just put the potatoes in the water you are using for shrimp and crab."
